Please explain this main course meal...?

Beef tenderloin is a very tender cut of beef. To be honest I cannot understand why anyone would pan-fry it. Jerusalem artichokes are a type of root vegetable which must be pureed and made into a mousse or sort of pudding type dish. Cannelloni are large tube shaped noodles which is this case seem to be stuffed with a mixture of oxtail and foie gras. Once again, I find this an odd combination and not necessarily the best way to use these exquisite ingredients.
