Biology Question about water collection in plants?

In the deserts of the US, mesquite trees send a taproot down many feet, whereas bunch gres and gramas send out their roots just below the surface in all directions. In what way do mesquite trees and bunch gres or gramas differ in their ability to collect water from a brief rain? Which are monocots and which are eudicots?
